This course includes a brief history of the cooperative movement in the US, followed by a history of the Potsdam Co-op. The presenters will discuss the different products available at the Co-op and their focus on providing a market for local and regional products. A presentation on artisanal baking and the Co-op’s wood-fired oven will be followed by a tour of the bakery and store. There will be time for further questions at the end of the session.

The Co-op General Manager, Bob Josephson, and Carriage House Bakery Manager, Chris Affre, team up for this presentation. Bob has been the general manager for the past three years, following a career in the office equipment industry; he’s a lifelong “foodie.” Chris has been the Co-op baker for the past 10 years.

NOTE: Please bring a hat or other head-covering for the bakery tour.
