This course will cover interesting scientific data and fun facts on what plant varieties are most packed with nutrition, and ideal ways to prepare them. You will go on a journey from the wild plants that comprised our original diets to those we see in grocery stores today. Find out how to reclaim the vitamins, minerals, protein, fiber, healthy fats, and antioxidants that have been lost in favor of other characteristics, and get gardening tips from the best if you're inspired to grow your own food.
Brad Pendergraft has bachelor degrees in Geology and Art, and a Master's degree in Education. He taught night classes in the geology department at SUNY Potsdam for 15 years and Earth Science at Salmon River Central High School for 17 years. Brad moved to the North Country 46 years ago to homestead on 180 acres and built a stone house, raised black Angus cattle, honey bees, gardened, and made compost. He is a Master Gardener.
Sara Trimm grew up in a farming community in the Midwest and has been gardening in Colton New York for more than 20 years now. She is a Master Gardener and enjoys learning all things, reading, and spending time in nature. She finds joy experimenting with garden plants and growing new things. She has had a lifelong interest in nutrition and wellness and recently began studying more natural healing methods.
